Eating a plant based diet doesn’t have to be boring and tasteless. I am a busy mom and I work full time teaching yoga and fitness. My recipes this week have been quick, easy and flavorful. Here’s one I’d like to share. Enjoy!
These tacos were quick and easy using precooked lentils as your substitute for ground beef, heat them up and season as you would taco meat.
1 package precooked lentils
Diced red bell pepper
Diced Serrano pepper
Diced sweet onion
Use your favorite taco seasoning or a blend on cumin, chili powder, paprika and salt to taste. Add a quarter cup of water and sauté until vegetables are tender.
Serve in tortillas when ready.
Optional toppings include cilantro, green onions, cheese, and/or pico de gallo.
